I'll defer to the other Michael (Keuter :-) ), but yes that should work.  
Though you would have to enable "Server-to-Server Connections" and possibly 
open TCP port 5269.

As I understand it, if you send a message to m...@ipcsolutions.com.au via 
AstLinux as the server, it would all be handled locally.  But if a message to 
m...@gmail.com was received by AstLinux then it would try to deliver it via a 
"Server-to-Server Connection", much like how SMTP and MX records do it, XMPP 
and SRV records make it happen.

By default AstLinux's XMPP disables such forwarding.

Of course, as long as your XMPP client supports multiple XMPP servers, and 
aggregates them, you could direct each to the proper server directly.

Part of the attraction of AstLinux providing an XMPP server of it's own is 
providing messaging for an office or small business that is actually "private" 
with no chance of inviting unauthorized outside "buddies".
