First off I wouldn't recommend using XML content at all because I don't think the aggregator support is very widespread yet. But if you were determined to use an XML type you may decide to choose application/xhtml+xml for backwards compatibility with aggregators that don't yet implement Atom 1.0. I'm not sure whether there are any aggregators that fall into this catagory but it's not an unreasonable hypothesis.
