Well it not work (I guess that should not be a surprise)

snap start org.gnome.evince.Daemon
error: access denied (try with sudo)


sudo snap start org.gnome.evince.Daemon
error: snap "org" has no service "gnome.evince.Daemon"


Nor 

snap start org.gnome.evince.Daemon.service
error: access denied (try with sudo)

So something is really odd here.
