I rarely worry what I choose as my Bard's second class, because it won't matter much during battle. Regardless of this fact it is not a good idea to pair a bard with another class/job that uses ability points. The reason is that the Bard class can use their songs regardless of if they have negative ability points. What this means is you can easily have negative points during a fight and won't be able to use other techniques such as Hide, Flurry etc. Second, the Bard song takes around two turns to recover from, so pair it with something that can cast a quick spell now and then. This is because you will never get to use your other class skills/spells very often, because you will either constantly be waiting for your turn to  come up or will be holding your turn to recast a song. My personal favorite is Necromancer, since you can take a summoned undead pet into battle, and throw an iceblast in every now and then.

As far as it is bad to pair a melee class wit h a caster class, it's mostly untrue. I do it all the time and if you use the proper gear and class combination, you won't see a major difference. It only becomes a bad idea when you pair a weak melee class with a weak caster class, such as the Adventurer and healer. It's also a bad idea if you try to split your ability points too evenly between melee and caster, as you may never master anything. Try experimenting, but keep in mind that if you start with a melee class first, you can often wear gear you won't normally be able to equip as a caster. An example of this is a Theif-Necromancer combination. If you choose Theif first, you can equip a pair of bucklers, which can boost your stats a lot if you have a pair with enchantments. Not to mention that you get the dodge skill and can use hide to cast a spell from the shadows. If won't count as a sneak attack, but you can avoid getting hit.

Bottom line is good gear can fix almost anything. No matter what c ombination you pick, if you don't equip yourself right, you will be in for a very long dungeon crawl.

Lastly the unlocked classes are found either by choosing a certain combination of classes or finding the proper card drops in the game (Goblins and Drake). There is also one that can be purchased in the Bazaar.

One final note, there are so many factors in this game to consider and most aren't clearly explained, nor are they easily found unless you know what you are looking for. Things such as the size of your character or what your weapon is made of can greatly affect the outcome of your adventure. Some are obvious but others not so much. For example, an Ogre Fighter can wield a spear in each hand, while a Half-Elf must use both hands to wield a single spear. Another is that a silver weapon and an iron weapon of the same numerical statistical damage are not equal. The iron weapon will most times out damage the silver weapon by a large margin and will be more ef fective against large dense NPCs such as the Drake.
