Ah. for that you have to enter a program change, which is something like
p12
or
p35
or whatever number. These will switch the instruments. for a list of what number goes to what instrument, see

you can also set the channel, though I forgot what command that was.
  And also, in addition to this, there is a language called mml, and another called zel.
