In your head, you've got all these ideas planned out. You generally know how you're going to code it. You're all ready and talk to people about it.
Then something happens and it doesn't work. It doesn't come out the way you wanted, maybe you just got bored with it. I can't count the number of unfinished projects I have that when I conceived the ideas, I was like OMG yes this is going to own! Now, months or years later, nothing happened because I lost motivation or got to work on something else. This is just how things go if this is your hobby. I don't just make games to make games, I learn from every game I make, whether it's completed or not, so every project is a success for me in one way or another. And I have lots of code that I can re-use in other projects.
But playing a game is a million times easier than making it, so I think the average gamer tends to overlook this. Really, your best weapon as a developer to surprise peopl e is to keep your lips sealed, so I've found.
