Start from series 1 in 2005 and go from there. After you get to "The End of Time" parts 1 and 2, I'd also recommend trying out Big Finish's audio drama series "Dark Eyes", because, well, let's just say I was really surprised what happened in that series. They couldn't reference stuff from the tv series directly, but I knew what they were getting at and it genuinely gave me much more respect for the lore of Doctor Who.
When you get to the 50th anniversary stuff "The Day of The Doctor" in the main tv series, keep the celebrations going with "An Adventure in Space and Time" (which is audio described and is a drama/documentorary about how Doctor Who came about) and also look for "The Night of The Doctor" prequel (it's not audio described but should be on YouTube) and then look for Big Finish's audio drama "The Light at The End" for another massive 50th adventure with every classic D
