Well, if these are "alerts", they are possibly not attacks. Adblock+ will not necessarily get rid of them, but is good to have anyway.
You probably *do* need to do these updates. Go to tools>addd-ons, and look around in there. I forget the precise procedure required to check if they're up-to-date. Flash is updated all the time, and Java even more so. Don't just assume these are attacks; that said, don't necessarily use the link they offer you. If you're really concerned about attacks, then make extra sure that you're right about your need not to update; updates tend to come with security fixes. Firefox itself can give you Mozilla's own plugin database/links page, but that's the aforementioned procedure I don't know off the top of my head. These get updates, on average, once a month to once every two weeks.
Also, watching Youtube no longer means Flash, as they've now
got an HTML5 player that works sometimes, and can apparently play audio without it. Do not use "Web site x works" as your benchmark for updating or plugin installation status-website x may have changed.
