@Chris, do you mean leaving a server, or deleting one that you own?
If it's the first, then navigate to the server you want to leave, go to the top of the window and press h once to get to the first heading, which is the server name. NVDA will tell you it's collapsed, so press enter on it to expand it. That'll open the server menu on the bottom of the window, and Leave Server is the last option in it, so the one you'll land on when you press control+end.
If it's the second, I'm not as sure, but I imagine you'd find that somewhere in Server Settings, which you can access the same way as the Leave Server option above.
