I don't think Artisoul learns moves just by seeing them. You have to have something to copy moves from. But I'd think anyone who knew enough about what to look for and how to find it would be able to cheat all kinds of things. A manamon that had all the moves from all the bosses would be cool for proof of concept I guess, but it would be absolutely pointless and boring to play through the game that way.
