That's actually not accurate.
What happens is that usually, classes are five levels apart. All classes except the one you pick on character creation start at level 0, not level 1. So your first five levels (level 1 to level 6) will be in your main class. Then you pick your secondary class. At that point, you'll be trading levels back and forth, keeping your main and secondary five apart, until you reach level 11 in main and 6 in second. Then you pick your third class, and it goes on from there.
Now, it's entirely possible, especially earlier on, to swap class order. You'll pay a bunch of experience for it, but you can technically grind up any class you want. If you really, really want a certain skill or spell, and want to bump one of your classes up a little to get it, you can do that. Generally I don't recommend it, but it can be done.
