Seriously; just make like 10 pots. That's enough water to get you all over the map and back before you need to refill.
Someone who is more ok with level-grinding-style gameplay might just sit and make pots for an hour, and have somewhere in the neighborhood of 400 pots = 4000 water capacity = -40000 thirst. Since thirst can get pretty high before it matters, that gives you hours of hydration.
If trading was a thing, pots would be currency for newbies.
If your ability to carry a dozen pots without them spilling gets nerfed in the future for realism, then sure, I'd suggest making thirst slow down a little. But at the moment, the solution is to make enough pots so that you always have enough water to bring you back from the brink of dehydration, and only stop to drink when you get too thirsty to travel at a reasonable speed without stumbling.
