You can write a script and give it the right name and put it on an SD
card or USB stick and it will get run at boot time. (I don't remember
the name of the file off the top of my head). You could put the
commands to start up the SSH server in this script, no need to turn it
on with the display. Once you can get in you can modify the startup
scripts so you don't need the USB/SD anymore. 

You can do a lot of things with this script if you want.
