The info should have been in one of those places, probably the chapter
template, where it describes the character styles. If it isn't, that's
an omission and I'll fix it. 

The names of dialog boxes should NOT be given a character style that
bolds or italicises them. 
Menu paths and buttons (radio and push) should be given the OOoMenuPath
character style, which bolds them. 
Fields are given OOoEmphasis character style, which italicises them.

I'll have to take a few minutes to compile a full list.
