AFAIK there is no 'purpose' of a layout. Just try them all (Mod4+Space) and use the one which suits your needs at a specific time. I, for example, mostly use the 'columns' layout, but on a pivoted screen 'rows' is better. When working with Gimp I use floating, and so on.
Spiral and zigzag are not very useful IMVHO.
