If you change to order type = Journal, it will not affect your on hand. However it is not purposely used to cancel an open order. It is used as a draft only. As you know, purchase order type will affect Ordered field. However, usually for open order we cancel it using Function -> Deliver reminder -> Cancel quantity and the purchase order will have the status of Cancelled
