Sorry, I have actually worked it out for myself, which is nice for a change.
For anyone who wanted to know, there is a Completed check box on the General tab against the purchase line item that was ticked. When I unticked this I could then post the reversal. I presume the tick was put there by the users deliver remainder transaction.
