Another option would be to use a BOM Journal with a negative quantity. This should then reverse all inventory postings.

As far as GL is concerned you should be okay as you would pass the correcting entries. If you use P/L journal then Inventory and Inventory Profit / Loss accounts will be affected, or if you want to use Movement Journal you can book the other part of the entry to any designated GL account.
