There is the capability to setup approvers based on position hierarchy in
the configuration.  Then if the hierarchy is modified before the approver is
needed, then the change will take effect.

E.g. Susan's boss must approve.  Susan gets a new boss. The position
hierarchy gets modified. From then on the new boss becomes the approver.

That may not be exactly what you need, but it does allow the configuration
to be a bit more flexible for changes in approvers.
