If I run another instance of simple axis server while one is already
running, the new instance takes over the log and deletes the earlier
server instance's log. This is really bad.
Running two simple axis2 servers on on the same repository? I think
it is bad practise to do that

In case users run, then we have to error and manage the log file
appropriately. As of now, we do nothing.

When I restart the simple axis server, the previous log is
overwritten, Rather the log should be continued, that is appended
