Make a handler (see samples/userguide/example4)
In the handler do:
msgContext.getCurrentMessage().writeTo(new FileOutputStream("message.log"));Then deploy your handler into the request/response flows.

and my lib for my environment variables is:

I don't know what the specific problem is (obviously a classpath issue), but I can confirm that you can run Axis using the the version of Tomcat that ships with the JWSDP. I do that all the time.
