My favorite distribution is Ubuntu 6.06. It will be supported for another 5 1/2 years, is easy to keep updated, and is a breeze to get BackupPC running on - apt-get install backuppc, add machines to hosts, configure SSH keys, and voila. I have several clients running BackupPC on Ubuntu at this point and haven't had any issues so far (at least none that weren't my fault :)
