evening,

i just want to share my experience about backuping vmware esx server.

1rst of all, it's depend of the version you use, in vmvare 3 you have the 
ability to do more or less the equivalence of lvm snapshot in few second, 
then you have all the time to backup vmware disk images files.
(see snapshot functionality)
be carefull using this method, vmware does not certify that snapshot backup 
are OK if the virtual machine work hard during the snapshot .... but if you 
can stop all your critical software/data in the virtual machine it's OK and 
working perfectly.

Note this method does not permit to restore only few files in the virtual 
machine but only the full image of the virtual machine.
(I use this way after stopping the virtual machine few times in the year to 
have a full solid backup but i also backup traditionaly using rsync/tar somes 
directories in the virtual machine like real ones.)

if you use vmware 2, the snapshot does not exist and if have a good memory you 
can't performe an scp of the vmfs filesystem, you have to export your virtual 
machine before (needs to stop completly the virtual machine before)

in this case am backuping the virtual machine with rsyncd and tar.
(update to vmware 3 is the good direction ta take, it's really better in vmw3)
