This procedure has been explained a lot of times on this list, you might want to search the archives. You just copy the data to the new array, unmount the old array and mount the new array as /var/lib/ backuppc. No symlink needed. The tricky part is the copying of the data, because the pool contains a large number of hardlinks and copying these at the filesystem level can take a *very* long time. You could try using dd to make a low-level copy of the partition and then grow the filesystem afterwards using your filesystem's tools. This list's archive may have more elaborate descriptions of this process.
