Snapshots should be sized based on how much data you expect to change over
the life of the snapshot. So if only 10GB of data changes during the time
you need the snapshot; then your snapshot only needs to be 10GB in size.
You'll need to determine this value for yourself.

You should also note that the snapshot does degrade disk performance
substantially (an extra read, disk seek, and write operation for each disk
write); so you should only use it when necessary, and try to avoid it if
possible.
