While my setup is fairly typical, and almost all machines have one C 
drive with all files, I'd like to throw some other machines that have a 
D, E, F, ... drive as well.

To try to do this, I merely added a D$, E$, ... share to the backup 
list. On the hosts that had them, they would be backed up.

Unfortunately, on hosts that _don't_ have them, being unable to open the 
share would result in an error and a partial backup. I would be ok with 
that, but the next time the backup is run, the prior partial backup (but 
full backup of the existing share) would be overwritten -- thus, I would 
only have about one day's backup.

That seems odd, but what I'd very much like to know is: is there a way 
to back up multiple shares, where a given share doesn't exist on every 
computer?
