It's hard to reconcile a good backup server with hardware that isn't 
100% available.  Have you considered using a 3rd box for the backup 
operation so it can run all the time if you consider a start/stop 
operation so problematic?  About any old PC that can run linux will work 
and it is cheap to add a big internal drive.
