Thanks to everyone that's replied!  Much appreciated.

It seems that another instance of BackupPC is the general consensus.  I'll need 
to think about how best to configure it, as as Johan has mentioned I don't want 
to overburden clients, but this should be easy enough with appropriately set 
blackout periods.

Why not simply install another instance of BackupPC, i.e. with a different 
retention policy, and treat both independent?
So if your primary instance would be messed up for any reason, you'll not copy 
that over to your off-site backup..
