Mike, The cpool isn't structured in a way that makes it possible to just copy recently backed-up files.
Ged's suggestion (just run another BackupPC instance offsite) is worth considering. That also provides more robustness to certain failures (eg undetected filesystem corruption on the primary BackupPC server).
