I'm overcomplicating things I'm sure....So I have to pretty much
replicate each job with a fileset __and__ a restore section ?

"...you will need a predefined restore job in your bacula-dir.conf
(Director's config) file. The exact parameters (Client, FileSet, ...)
that you define are not important..."

That is mildly confusing

A sample client's jobs (backing up 2 separate shares R:\ and S:\ of said
box):

Job {
  Name = "hoover_data"
  Enabled = yes
  Client = "hoover.itos.uga.edu-fd"
  FileSet = "hoover_data"
  Schedule = "WeeklyCycle"
  Write Bootstrap = "/var/db/bacula/hoover_data.bsr"
  Storage = "LTO3-1"
  Type = Backup
  Pool = "Default"
  Priority = 10
  Messages = Standard
}

Job {
  Name = "hoover_gis"
  Enabled = yes
  Client = "hoover.itos.uga.edu-fd"
  FileSet = "hoover_gis"
  Schedule = "WeeklyCycle"
  Write Bootstrap = "/var/db/bacula/hoover_gis.bsr"
  Storage = "LTO3-1"
  Type = Backup
  Pool = "Default"
  Priority = 10
  Messages = Standard
}
