ini resepnya yah....
saya dapet dari kakak saya yg jago masak.... heheheh...
Sayur Asem Betawi
Bahan :
- Daun Melinjo + Melinjo (sesukanya)
- Kacang Panjang ( 1 Ikat ), Potong 3 cm
- Kacang tanah ( 2 ons )
- Labu siam ( 1 Buah ), Potong dadu besar
- Jagung manis ( 2 Buah ), potong menjadi 4
- Nangka Muda (1/4), biasanya sudah di jual belahan, pilih yang kecil
saja.
- Belimbing wuluh (2 buah)
Bumbu :
- 4 buah Cabe merah
- 3 buah cabe rawit
- 2 siung bawang merah
- 1 sdt terasi, di bakar
- Garam secukupnya
- 2 buah Kemiri, di sangrai sebentar
- 1 sdt gula merah
- 1 Asam jawa
- 1 cm Laos
- 2 lbr daun salam + 1 btg sereh (dimemarkan)
(semua bumbu dihaluskan jadi satu kecuali laos dan sereh)
Cara membuatnya:
- Rebus nangka,melinjo,jagung, labu siam dan kacang tanah, setelah empuk
ambil separuh kacang tanah, dan haluskan bersama bumbu.
- Setelah empuk semua, masukkan satu per satu: Kacang panjang dan daun
melinjo.
- Kemudian masukkan bumbu2 yang telah dihaluskan beserta laos dan sereh,
tambahkan belimbing wuluh (dirasakan terlebih dahulu, apabila dengan asam
jawa sudah cukup asam, menambahkan belimbing wuluhnya jangan terlalu
banyak, kecuali suka rasa yang asam).
Semua bumbu sebenarnya tergantung selera kita, bisa lebih manis asam dan
pedas.
Untuk Sayur Asam Jawa, gulanya ditambah dan tanpa kemiri.
Untuk Sayur Asam Sunda, gulanya dikurangi setengahnya tambahkan terasi dan
irisan cabe rawit,
tanpa kemiri .
Kalo untuk temennya sayur asem, kami biasa pakai :
- ikan asin gabus/jambal goreng
- empal/ayam goreng
- tempe/tahu goreng
- sambel terasi dan lalapannya (ketimun, terong hijau bulat, selada
air/selada bokor, kol, kemangi, pokpohan, tespong, baby labu siam rebus,
wortel rebus)
itu aja, udah nikmat banget, nggak pake tumis2an...soalnya kebanyakan lauk
jadi bingung dan mengurangi kenikmatan..... heheheh
halah....jadi laper nih!
