Thanks for the tip and I did find the proper place for the font. I'm
new to the MAC OS X System and there are a lot of things I need to
relearn. This is the first MAC I have operated since the early 90's
so I'm trying to get used to the UI again.

Are you using 8.5 or newer? Open the search drawer on the side of
the preferences window, and search for "font". There are more than
two font settings. One of them actually controls whether or not
font settings saved with a document should be honored or not...
perhaps you have that shut off?
