I have recently change to a new (larger) monitor, and ever since then BBEdit
windows open approximately 3/4 of a page width and full height of the
monitor. Is there a setting somewhere that I can tinker with to get "proper"
sized windows again?
I've tried checking the application preferences but can't find anything
there.

If you create a window with the desired dimensions, then go under the
'Window' menu to 'Save Default Window', that should do the trick.
