But perhaps you inherited some files that already have curly quotes in them.. If you open those files, then the simple fix to get everything back to plain text is to use "Text" -> "Convert to ASCII" from BBEdit's main menu. That will make all the characters in your file conform to the lower decimal 128 ASCII values. The next time you open those files, you will get straight quotes for any new quoted text you type.

As an added point, if you have LOTS of files that have the curl quotes,
you can always make a text factory and batch fix them all at once, or
simply use Search --> Multi-File Search.
