Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
cup Worcestershire sauce
3 tablespoons tomato-based barbecue sauce
1 tablespoon minced onion
2 garlic cloves -- minced
1 tablespoon , freshly cracked pepper
1 teaspoon table salt
teaspoon hot pepper sauce such as -- or more to
taste
Tabasco
3 tablespoons butter -- preferably
unsalted, in several chunks
2 tablespoons fresh lemon juice
1 pounds medium-large to large shrimp -- peeled and
tails removed and, if you wish, deveined
(about 30 per pound)
In large bowl, combine all ingredients except butter, lemon juice and
shrimp. Stir in shrimp and let them marinate 30 minutes at room temperature,
stirring occasionally.
Fire up grill, bringing heat to high.
Drain marinade from shrimp and pour it into medium saucepan. Bring marinade
to boil and boil vigorously several minutes. Add butter, stirring until it
melts completely. Remove from heat and stir in lemon juice. Reserve as a
sauce.
Arrange sheet of non-stick grill foil, large enough to hold shrimp in one
layer, over grill's cooking grate. (If you don't have this type of foil, use
a sheet of regular foil and poke holes in it every few inches with a skewer.
Spray the side you'll place the shrimp on with vegetable oil spray.) Place
shrimp on foil in one layer. Grill shrimp 2 to 3 minutes, baste quickly with
sauce, then turn and grill 2 to 3 minutes. Makes 4 servings.
