My apologies. Doing a wvunpack -ss on one of the resulting files gives me all the tags including:
Cover Art (front): 275640-byte binary item Looks like it's just my players and file managers which include: totem (gst 1.0), mpv (ffmpeg), and the gnome file manager which don't display the covers.
