Use a hash of hashes:
my %phonebook = (
Fred => { EMAIL => '[EMAIL PROTECTED]',
NUMBER => '0123',
ADDRESS => 'fred\'sstreet 34', },
);
which you can access with
$phonebook{Fred}->{EMAIL} #etc
