A nice easy option is rsync

An alternative approach is

  find /dir/to/backup | cpio -pm /var/backup/

do a man find to see all the find options you can use
- for example you can tell find to only report files 
  modified within the last day with:

  find /dir/to/backup -mtime 1 | cpio -pm /var/backup/
