search for the user, click on Default Configuration under the Messaging configuration heading, click on the email tab on the far right, edit user, clear it all out and save it.
It sucks. I actually did it on BES 4 before i migrated everyone to 5 and its a little easier. We only have 180 users, so it wasn't that bad, if you are in the hundreds or thousands this wouldn't really be an option.
