I use AnyDVD HD for both DVD and BluRay, but just for DVD you could use
DVD Shrink (free) and set the compression option to 100% so it doesn't
actually alter the mpeg stream at all.

These will give you ISO images of the full discs so you'll still have
all the audio tracks from the original available to you.

I go a step further and strip out the main movie into an MKV file with
high-def audio (on BluRays) so I don't have to watch adverts and go
through the menus; I just hit play and the movie starts, but the
Popcorn Hours are quite happy with ISOs and that'll give you the DVD
player functionality but with files stored on disk somewhere (I use the
same NAS that I use for Squeezebox).

The players can also downmix 5.1 to stereo (with the exception of Dolby
Digital TrueHD tracks which it doesn't have a license for and so can
only pass through unaltered) so if you have a room with only stereo
capability then you just choose downmix on that particular player.
