Andreas: If I am not mistaken, fields for the Minimal BibTeX Record are specified in BibDesk's Default Fields preference pane in the "Custom BibTeX Types and Fields" section. Simply add "Doi" to the "Optional Fields" column there, and it will be included in a Minimal BibTeX Record.
