I must carry too much stuff. Even "credit card camping" (our term for lodging tours & restaurants) I can't seem to get by with less than a couple of panniers plus a handlebar bag. The pension, pansion, sobe, or zimmer (depending on country) is the way to go in Europe. Always an adventure (do they have hot water? Can we hang our clothes outside to dry?) & usually cheap. In europe this style of touring is feasible because everything is so close so you can always ride out to the next hotel. Richard Mylarik calls this style of touring "jobsting".
