We have butchered 1 and 2 year old ewes and usually come out with 40 - 45 lbs. of meat. We recently butchered 2 spring ram lambs( 7 - 8 months old) and we got 24 lbs.of meat just in ground. We usually don't cut lamb chops but take out the loins and butterfly them and we keep several roasts and steaks.
We did butcher a banded ram that was a year old last spring and he dressed out at 65 lbs. I kind agree with Carol that maybe the butcher didn't do a very good job or that your sheep may be underweight. I know we probably feed ours a bit more than we should!!!! Sue Miller
