I have three BC's and they make life with sheep so much easier. But for close work I put the dogs up. Their presence keeps the sheep from calming down completely. Everyone should have a pen with a panel that can be closed in to make the area progressively smaller. If the sheep are packed in tightly they can't run amok and you just wade in and grab who you want. A race or chute is very handy also being only 18-24 inches wide and maybe 10 ft. long. Run the sheep through this and with drop gates at either end and they pretty much have to submit to whatever you want to do to them. Good luck.
