  I too would suggest a holding pen that is at least 5' tall.I find that the ewes can be a bit more harder to handle than the rams.Young rams that is.One way to get your animals tame enough to work them is to spend a lot of time getting to know them and for them to get to know you.If you have the time.Some of my sheep like to be rubbed in the face and would walk right up to me.I can do almost anything I want with them. They respond well to food also.They will follow you if you have some thing they want like grain of a tasty legume plant.
I've also got my sheep accustomed to a regular grazing period so they would graze nearer to the gate as their grazing time shortens.They can be very well trained like dairy cattle.When it is time to come in they would all gather close to the gate I open it and then I call them in by calling to them "come girls" and they all run right to their pens looking for grain.That makes it easy to catch them when they least expect it.Using a low voice and crouching close to the ground you can sneak up on any you need to catch or get close enough to use a crook.
