I wonder if folks on the list would be interested in this study done by the University of Saskatchewan on Katahdin meat at the request of the Saskatchewan Katahdin marketing group. What is interesting to note is that the cholesterol level is just over half of what another study on generic lamb reported, and considerably less than chicken.
