Dr. Crawford, When you state 50lb animal

should get about 30-35lbs of meat from a 50lb animal, which is about what
we normally get. We normally ask for leg of lamb (bone in), shoulder roasts,
chops (loin), brisket, rack, shanks, (great for soups), some stew
meat, and the rest ground lamb (great for taco, chili, lasagne,
enchilades, even spaghetti. You should have enough meat for the stew and
ground. We even ask for the kidneys, heart, fryers, liver. We use them
for gravy giblets, for our cats and dogs (after boiling them, they
love to eat them) or even for some homemade Haggis (Yes, were Scottish). Hope this helps. Steve |
