I did a new install of poppler with --enable-xpdf-headers, and now the
build of LibreOffice with --with-system-poppler went fine.
Proof: ;)
ldd /usr/lib/libreoffice/share/extensions/pdfimport/xpdfimport|grep poppler
libpoppler.so.19 => /usr/lib64/libpoppler.so.19 (0x00007fd3c21b1000)
