I've never figured out how to disable certain plugins, but you can try editing ~/.mozilla/firefox/pluginreg.dat. This will be regenerated any time a plugin is added or removed, though. I think it would be as easy as commenting out the lines where the mplayerplugin has registered the Real mime types.
