I know nothing about this package, but I'm going to guess this is one of those cases where "recommended" means "you will have to make some changes (e.g. adding extra switches) if you omit this package". Do you actually need LDAP for your use case ? If not, since virtuose is a regular 'configure' package (much easier to look at than cmake, IMHO), I suggest you look at the configure script to see if there are any easy options for disabling LDAP. Failing that, look to see which .pc files(s) - if you are lucky - or else which programs / libraries it looks for.
